Mango ginumis recipe is a kind of mango dessert! Today let's beat the heat of summer with this simple yet delicious dessert recipe. Mango ginumis is a Filipino version of mango shaved which is a very popular dessert in many south east Asian countries especially Taiwan.
I will show you how to make the base recipe of ginumis which is just the same base of making smooth and creamy ice candy.
Yield: 15 serving
Base Ingredients
2 pcs Large Can Evaporated Milk
7 cups Water
3/4 cup Cornstarch
3/4 kg White Sugar
It's all up to you what flavor do you want!
Choices of Flavor
Mango Ginumis
1 1/2 kg Ripe Mangoes
Buko or Young Coconut Ginumis
3 pcs Buko
Ube Ginumis
1 1/2 cup to 2 cups Ube Halaya

1 small can Condensed Milk
(for topping)
Procedure
In a mixing bowl combine 2 cups water and 3/4 cup cornstarch, mix well and set aside.
In large hot pot, pour 5 cups water and bring to a boil.
Add sugar and dissolve.
Add evaporated milk, give a little mix and bring back to a boil.
Once boiling slowly add the cornstarch and water mixture while mixing.
Cook for 3 to 5 minutes over medium flame while continues stirring.
Turn off the fire and leave to cool.
For mango flavor, Get the flesh of 1 kg ripe mangoes.
Put in a blender with a little amount of the cooled ginumis base (just to get it going) and blend until smooth.
Add to the cooled ginumis base and mix well.
Pour on an ice molds or ice cream cups and freeze.
Once frozen, place it into a food processor or blender, turn on the machine until all of the ice has been crushed.
Transfer in a bowl and top with diced ripe mangoes.
To finish drizzle with some condensed milk.
For other flavors except Buko just do the same procedure.
Important Notes!
Recipe yield is good for 15 to 20 servings.
Ginumis base is just the same to Ice candy base that we make recently.
You can add vanilla extract if you want.
After you put the cornstarch and water mixture make sure that you cook it for another 3 to 5 minutes to make sure that the cornstarch is cooked. Date: 2020-05-15
