That kind of kebob requires a meat with way more fat percentage in it (around 30 to 35%) to provide enough moistures and stickiness to your ground meat, and you should not use that kind of onion mixed with it, onion must be compleatly juiced out and you use the pure joiceless onion mixed with your meat. Onions are blended and Usually filtered out from a clean piece of lady's long thin filter shape starlight nylon socks, because onion juice is main reason why meat wouldn't stick to skewers, also the meat must mix with onion and stay in refrigerator in advance for couple hours. If meat sticks to your hands when mixing it then it would stick to your skewers as well.

Good stuff Sam but here is my 2 pennies for skewer logic. I always do protein then veg (onion, courgette / zucchini, mushroom, tomato whatever) and repeat. Every piece of steak or chicken or whatever is bracketed by veg. The logic is that they don't clump up and have any area that is not cooked (especially chicken) and more important I think the veggies emit steam that ensures your protein cooks properly and quickly - so yes you want some caramelisation / maillard stuff going on but the steaming makes for a fast and safe cook.

Sam, I am quite upset with you! I would like to request that you create something which features Scotch bonnet pepper sauce this is a bottle of Caribbean pepper sauce that has a unique flavor but he also has a lot of heat it is something that is mostly used by 1st 2nd generation Caribbean immigrants not too well known amongst red-blooded Americans however I would request that you check it out and you probably included in many more of your recipes once you see wedding rings

I just about shit myself laughing when the lamb and foil fell into the fire. Not your day Sam. Either way, no oil necessary for the lamb. That was the main problem for you. On another note. I would like to invite you and your team to Romania. I am also a chef but not Romanian and speaking as a lover of food, I think you would get a kick out of some of the local dishes and they might even give you some ideas. Pellet smokers are terrible and the people who use them are weird, I would go so far as to say it ain't BBQ unless you use real wood charcoal and real wood for smoke to add to that I would say if you need BBQ sauce you don't know how to bbq. NO offense but people trying to make plant based beyond meat Aka Soylent Green taste like meat, cows have been doing that for years. Lol

I think the lamb wasn't holding is because of too much dry seasoning and less wet seasoning, i think you needed to add yogurt but most importantly, tomatoe and parsley and i also think the lamb was suppose to be chopped lean with hand that way they're not too lean to a point it doesn't stick to the skewer.

You know what i like, even though a nighmare happened you still adapted and re purposed, most ppl whould have thrown it away because of ash, its like camping and something falls on the sand and noone wants to eat it, shit ill wipe it off and eat it, a lil ash or sand never hurt anyone!

Wondered why you didn't just wrap bacon around the ground lamb when it kept falling off the skewer? Everybody knows bacon is the duct tape of the food world, and should be the first thing you reach for whenever there is any problem whatsoever during food preparation.

anyone try this? never seen a video where the whole kebab is falling into the grill nor watch people taste to keep the video safe and no response. cmon man. takes a few minutes to try before putting out a video which half of it is unusable. :)
