Greetings! At the 1: 40ish mark, you ask Max & Chance if anybody would be screaming that it's too rare. I agree with you that It's beautiful! -- In fact, a person cannot consider themselves a carnivore if they prefer any cut of meat cooked more than medium rare! And, here's a tip to stop saying Don't leave it to Chance when referring to technique, since you have a cameraman named Chance. Try Don't rely on dumb luck instead-- [I kinda doubt you'll find anybody to hire named 'Dumb Luck'! ] -- Can't wait to get a-holt of your cookbook. Blessed Be, & Peace!

The best ribeye is room temperature, rub canola oil over it, then salt and pepper. Heat the oven as hot as it will go. Put a pan capable of going in the oven on the stove and heat it till it smokes. Then sear on both sides for 30 seconds. Then pop in the oven for 90 seconds to 2 minutes depending on thickness. Flip then another 90 seconds to 2 minutes. Put on a plate and rest under foil for a few minutes.
Perfect Ribeye, every time.

I always make at least 1 more steak than is needed for dinner because there are 2 more meals before our next dinner. I may not Thai it up but steak and eggs in the a. m. and a steak salad at noon time or maybe some cold steak at 3 in the morning. I mean c'mon. It just makes sense.

So funny! I also make a mixture of salt, pepper and garlic powder. I keep it in a crock on the counter labeled This and That, however I use Himalayan pink salt. My son said he loves it so much, he d put it on his cereal!

Sam is the best, when I make chicken fried ribeyes, filetjitas, or whatever else on those funky days, I remember Sam does that shit too and feel better about using good cuts ridiculously.

Only 1 mistake that was said. The fresh rice is not perfect for everything, like fried rice. Day-old rice is best for fried rice, just ask Uncle Roger.

I really like the concept of this book, seems very inspirational.
