To Barry, a few years late. yes. You can get knocked over with the steam. As my husband (and sadly I, because he called me over before I knew what he was doing) learned when he tried to make a seriously trashy quick mead for a party using everclear (think moonshine but a higher alcohol content and worse flavor) with honey and seasoning. He got all the flavors up to a boil (honey, spices) and then proceeded to dump in a gallon and a half of everclear into the stockpot. then leaned over the sudden steam cloud. He went giddy. I had to go sit down for an hour. He's not allowed in the kitchen much these days.

to make the sherbet fizzy add a teaspoon of bicarbonate of soda and when it hits moisture the acid and bicarb react making it fizz
