I tried the boiled orange muffin today and they are really very nice. I made two changes, first, use normal sugar instead of caster and demerara sugar as well as 120 ml extra virgin olive oil. Surprisingly, the olive oil taste is not noticeable or maybe only a small hint. The muffin tastes like an orange muffin, the boiled orange really gives an intense flavor. If I were to make this muffin again, then I would use more Blackberries and keep the high temperatures for a few more minutes to get a nice round top. After filling 12 normal/large muffins to the top, I get quite a few leftover, so this recipe should be easily enough for 15 muffins.

Anyone I need help with this! Apparently it's practically impossible to get normal olive oil anywhere for me. they only ever have extra virgin olive oil. do you think it will change the taste of the muffins too much if I only use extra virgin? should I try just using less oil. but will that make it dry. it blows my mind that I can't find normal olive oil in any of the many stores i've been to

I tried Bens recipe, boiled orange and all. I took half of the batter and used the blackberries, and then I took the other half and put in mini chocolate chips for my coworkers who arent a fan of seeds in their teeth. Both versions turned out delicious and the moistest muffins I have ever had. Thank you for the recipe!

raising agent? So some baking powder, usually. Also with the buttermilk usually some baking soda to counteract the acid. Or maybe just baking soda?
In case anyone is wondering, don't worry about not having a dough hook mixer - its totally unnecessary with muffin or similar baking.

Surprised about 2 things for Jamie's savoury muffin: 1) that he didn't hold a bit of pancetta back from the blitzer to put on top (decorate, plus a few chunks would be nice, and 2) that he put sugar on top (and it looked like a BOWL-full of sugar in the mix.

I don't know why, but this series is always the one that motivates me to actually cook/bake. I made the Spanish tortilla from the omelette episode a while ago (turned out great) and now I want to try Barry's muffin recipe.

little quibble - every time you use pancetta (quite often, you always describe it as smoky. you've even got Ben doing it. the difference between pancetta and bacon is that it ISN'T smoked.

Just trying out the boiled orange recipe, is there anything that can be done with the water? Just from the smell I just think it would be a waste just to just toss it afterwards.

I have a question: I tried making Ben's Muffins into the aforementioned cake but I feel the baking time didn't work so well for me. Any suggestions on how it would need to be adjusted?

I have not booked an orange before to out in a muffin. I have however out it in a malva cake. Cannot wait to try all of these muffins. I think my husband might really love Jamie's.
