With lots of practice roll the dough into a large single rectangular sheet. Then cut into smaller square skins. Less work that way. Lots of work but hand made dumpling skins take the texture to another level.

I can relate to that dictionary part. Whenever I open one I get sidetracked to those other words I don't know and sometimes so engrossed in reading other stuff that I forget why I even opened the damn book.

i belive instead of making realy small then cutting it, ita faster and better if make a singular Sheet of wonton skin then cuting it square evenly like i used to do back at my home

hmm. never heard or tried a crab meat wonton before. Traditional cantonese wonton are made with fish broth, and wontons are made with shrimp and pork.
