Let me get this straight: you carefully brine it with interesting flavours, remove it, then before smoking it, you cover it in large quantities powerful spices and then smoke it. That is THREE different flavours all competing and over-powering the mullet completely.
So my question remains: what does mullet actually taste like?

We fish for mullet on the rivers in Alabama every summer and catch them by the hundreds. A few to fry, and the rest are smoked, salted, or canned. a little olive oil and some jalapenos, and the canned are the best hands down!

Dizzle it may be better the cut the head off after you remove the spine it will give you a holding point - scale them then cut always works best - One tip i will leave here is do your scaling at sea just after you catch the fish

One of our favorites here on the Mississippi gulf coast. Biloxi bacon. We eat them smoked or rolled in corn meal and fried along with the gizzards. We keep the roe too when it's in season.

In Hawaii we steam cook mullet Asian -style with soy sauce, sesame oil, vinegar/sugar, grated ginger, green onions, if you haven't tried this? chili peppers opt.

I grew up on the west coast of Florida and we ate a lot of mullet either smoked or fried. If you put it on ice and clean it fast it fries up really nice.

When I lived in Jacksonville I practically lived on fish. Mullet featured regularly in my diet. It is good steamed in foil around the campfire also.
