In today's Florida inshore fishing video we are out of Stuart heading north for trout and redfish in heavy winds. It was slow until we started fishing docks and started catching snook and sheepshead.
Dan: A thought on the flour coating. 50/50 mix of flour and corn meal, maybe a few teaspoons of corn starch, s&p, and a healthy dose of Old Bay. I put all the dry ingredients in one of those plastic bags from the produce section in the grocery store. Shake to combine. Then put the fillets (max 2) in the bag and give it a good shake. Pull the fillets out and give them a gentle shake to remove the excess. Then right into the pan. I never use an egg wash because most fillets have enough moisture for the flour coating to stick.
