Having lived in Japan and all over the Far East for 4 years sushi always has the Nori ie seaweed on the outside. Don t think I ever saw a sushi roll without ginger at minimum. Sashimi on the other hand was a pinky finger size piece of raw fish on top of a ball of sushi rice with sinus burning Wasabi: ) optional. I can t remember ever seeing dipping sauce in a sushi bar because the quality and taste of raw high quality fish was the star.

Nice ono! BTW do you know the derivation of the name Wahoo? In case you don't, Wahoo is how O'ahu the Hawaiian island was misspelled back in the days of Captain Cook. The ono was called the O'ahu fish by newcomers to Hawai'i back then or maybe I should say Wahoo fish.
