BUFFLEHEAD (SEA DUCK Catch & Cook) - Bluegabe Vladimir: Man, you really need some better duck recipes. Here's one I'm using for smaller ducks, like the ones you hunted here. First you pluck the entire bird and clean it whole (skin on, like a chicken, you throw away just the wings cutting them at the first joint (not much meat there to be worth keeping. You take out all the guts, rinse it thoroughly, then sink the whole bird in a 50/50 mix of salty water and white wine for a couple of hours at room temperature. After you take it out of the broth (without rinsing) you apply the seasoning powder mix of your choice all over (inside and out) and fill the whole body cavity with a mix of chopped onions, carrots, parsley and orange peels, plus a couple of bay leaves and a small hot pepper. Place the stuffed bird in a cast iron pot that you thoroughly oiled in advance, add a few slices of onion and carrots on the outside as well, than fill the pot with a 50/50 water and wine mix until it covers the meat entirely. Cover the pot (apply aluminum foil on top if it doesn't have a lid) and put it in the oven, set on medium heat and leave it there for about 2 hours (or until the meat is tender enough, you check it with a fork from time to time after the first hour. When you think it's cooked through you take out the pot, pour the remaining liquid in a bowl, place a few thin slices of butter on top of the meat and stick it back in the oven without the lid for 10-15 minutes on high heat to crisp up the skin. In the mean time take the stock liquid you got out of the pot, strain it and use it to make a nice risotto. When the duck is nice and crisp take out the stuffing (some people eat it mashed on the side, but it's kinda bitter) and serve the meat on top of the rice, with a fresh vegetables salad or whatever else you like on the side. Small ducks like this can be eaten whole by one person, so I usually cook 3 or 4 of them at the same time. Serve it immediately after cooking, it loses a lot of flavor if you cool and re-heat it.

Gabe I absolutely love my benilli super black eagle 12 gague but I use it for deer season & it has rifling for slugs! I ended up getting 8 deer for are group that I hunt with! Now for a 20 gauge I have a browning pump with the canleiver barrel but I am definitely looking to get a bird barrel for eathier one of those guns! That browning BPS is a pump shot gun & I absolutely say it-s my favorite pump gun that I have! Awesome video buddy!

Double barrels are great when you don't have to hoof it around. When I go on 10 mile hike hunts, I don't want to carry an extra barrel around. I've never heard or seen a sxs or ou jams or malfunction ever. Not saying these new semis are bad, but they're not as close to perfect as a good 2 barrel scattergun. Also don't have to show/prove that you have a plug if you're around a warden.

Man, as bloody as duck is I have a recipe that even a city girl will love! Cut sweet cherry peppers in half, and cube your duck. Pack the pepper with cream cheese and the duck nugget. Wrap in bacon, cook till bacon is done. Just as the bacon is ready, glaze with a sweet Asian chilli sauce. Doesn-t get any better

been duck hunting with my Benelli 12 gauge Nova Pump for 16 years and my brother has had his Super Nova for 11 years. never had any issues. quality shotguns. i will say that diver ducks are not as good tasting as dabblers. they have a fishy taste, i brine all my ducks but divers especially.
