LFG Here is a knock off of Chick-Fil-A Spicy breading. Give it a try, I think it is pretty dang close.
For the breading:
1 cup all-purpose flour
3 Tablespoons powdered sugar
1/2 teaspoon paprika
1 teaspoon freshly ground black pepper
1/2 teaspoon chili powder
1/2 teaspoon salt
1/2 teaspoon baking powder
For a spicy chicken sandwich, add 2 tsp cayenne pepper and 1/2 tsp more of chili powder to the breading

I feel her on Chilean Sea Bass, however, you're at the mercy of how much you wanna spend for it cause the shelf life isn't the best and is 9/10 frozen to help it last longer. I can get Patagonian Toothfish right now for 34. 99/lb in Central New York.

I live in Massachusetts and bake striped bass and Black Sea bass once in a while its probably my favorite fish never had freshwater fish Im a catch a release with almost all my fish except stripers over 26 inches and sea bass

I can eat pond raised catfish, but I don't care for wild caught.
I think I'd like your Mom's breading better than more flour, but I'd throw in some cajun seasoning. Can't have enough of that. :)

LFMom was definitely trying to be sophisticated saying her fave was trout. lol nobody's favorite is trout. especially if catfish is in the race! Fried Catfish is located in the heart of flavortown!

Windex helps get the catfish and perch smell off your hands. As far as fishy taste in catfish, it helps to soak it in buttermilk before frying it up.
