First, thanks for making this video, there's some great info here! Also, those were some great-looking sandwiches, hoagies, subs, grinders, or whatever they call them where you're from, but I have to say that they're in no way po' boys. I also must take exception to your statement that a good po' boy has to be made with soft bread, and that's why, even though you made some nice sandwiches, any po' boy from where they originated (Louisiana) MUST be made with incredibly delicious, hard-crusted, French bread! Most restaurants in Louisiana and Mississippi that specialize in po' boys use a special French bread that's baked locally, but any French baguette will do. The best way to order them is dressed and pressed, which means with lettuce, tomato, and remoulade, and pressed between the heated sides of a po' boy press. It looks a lot like the bigger presses that laundries use to press (iron) clothing.
However, I wouldn't say no to the sammich you made in this video. I just wouldn't call it a po' boy.

Victor, I'm a. new viewer but have watched several videos. You have a great presence on camera and most importantly you don't talk to your viewers like they are idiots. You probably won't read this, but wanted to say thanks for that as well as another great video. My son and I fish inland fresh water and get offshore when we can. ATB. Jerrod -- SC

I honestly don't think grouper are that good. Every tourist that comes to Florida thinks it's the end all be all fish. Buuuuuuut, there are soooooo many better eating fish than grouper. ask Vic.

hey Landshark. Do you guys not take the cheeks of the grouper when you clean them? if not, they are absolutely the best part of a grouper! Very easy to remove the cheeks too.
