Everybody has been asking me to do a bonito (False Albacore) catch clean cook and its finally here! The other day we went fishing offshore, and caught a blackfin tuna on light tackle, as well as some bonito (albies. It was the perfect opportunity to do a Blackfin vs bontio taste test and to prove that the bonito is in fact NOT a trash fish! They were prepared seared with sesame seeds and you could not tell the difference in taste between the highly prized Blackfin and the mislabeled trash fish bonito. Bonito (Mackerel Family) is not the same as Bonita (a. ka. False Albacore Tuna Family. Bonita is considered lower quality mostly because it is a very bloody meat. If you cut the fishes throat immediately after catching while its heart is still pumping you can bleed it out while you ice it. Makes for great Smoked fish Dip and/or Tuna salad, I usually reserve the Blackfins for Sushi and Tuna Nachos.

I agree with Austin, in hawaii the big ones are held as Awesome, you'll notice that if the fish is clear red and has an oily texture that's the best, some times they'll be hazy and laptic acid is present and that's the junk one. I've caught 30 pounders that was the most delicious sashimi ever. like I said it depends on the condition of the particular fish and how you clean it.

That was a pretty good video just enough fishing having fun, good instruction on butchering the fish & basic cooking technique. Thanks for the fair taste test I eat ANYTHING literally but I was curious about the flavor because a African restaurant around the corner cooks Bonita & I was deciding what to get when I go. I guess I'll try teh Bonita

I've never understood why people think Bonita are trash fish. They even look like a damn tuna. They taste just like Tuna, they look like Tuna.
I'm guessing people like to talk shit about Bonita, is ego. IT AIN'T AS BIG AS A TUNA, IT'S TRASH.

Bonitos are much stronger in flavor I prefer skipjack and bonito to other tuna verieties do to the stronger flavor also skipjacks 30 pounds and up are prized in Hawaii for sashimi due to their excellent texture and flavor also known as otaru

next time you catch a Bonito that has some size make thin steaks with it and use some Chef Paul blackened Magic and Fry and some olive oil it tastes really good but like you said get rid of the bloodline

I tried cooking bonita once like I would a snapper and it was not very good. But in another occasion I removed the bloodline better and also bled it right after catching it and it tasted much better.
