Try cutting the tuna's gills and put them in a bucket of running salt water for 10 minutes. Alternatively you can puncture the tuna in the armpit just behind the pectoral fin. Make a slush with the ice, a bit of sea water, and some rock salt to rapid chill the fish. The difference will amaze you especially if you eat the tuna as sashimi.
