Don't take this as a racial comment, but I've seen 95% white American only eat the filet of the fish. The rest of the fish goes to waste. True fish lover eat every part of the fish and sometimes the bones too (if soft enough. True fish lover will eat pretty much every fish and never call any of them as trash fish.
But thanks to that, many fish (trash fish) do not have size or limit regulations
Oh, FYI. If you don't want the fish to smell fishing/blood line. You chop the tail end off and hang it with tail pointing down. The blood will drop out of the fish and it'll have no smell.

Seems as though less and less fish are turning out to be trash fish. I've fished with fishermen on an overnight bluefish trip who consider flounder to be trash fish. I think flounder is a much better tasting fish than bluefish. On the Jersey shore where I normally fish I've caught giant sea robin that most Jersey jetty jockeys consider to be trash fish. I keep all of them that I catch. They may look strange but they taste better than striped bass and similar to sea trout. If you don't believe me try them yourself. You'll be surprised.

An EXCELLENT Documentary! So well done!
When I was in my 20s I feed the trash to the farm cats.
In my 30s I started Smoking Jacks, even big, old ones.
In my 50s I learn Japanese Sushi technique on the Jack Family.
On Im almost 70.

I had a taste test of Bull Head, Sunfish and Catfish. I don't think it matters what the fish looks like it is how you prepare and cook what counts. There is a difference in liver from prime rib in beef.

What about normal sized Jack Crevalle? The ones most people catch and cook are several pounds larger. I wonder if those are as good as this small one
