I absolutely love Yellow Jacks and wish we caught more of them. They are often found around reefs and wrecks and are amazing fighting fish, as well as great table fare. Not to be confused with the Jack Crevalle. Yellow Jack have very firm white meat perfect for sushi, sashimi, grilling and stews. It was a great fish to use for my Bouillabaisse! Bouillabaisse is a french fish stew or seafood stew, that is often served with a spread called rouille. I highly recommend anyone try this recipe as it was beyond delicious.

Aloha Viktor. When I saw the Yellow Jack I got really excited especially when you said ceviche. Sashimi would be nice but ceviche nice too as well as poke'. As delicious as your bouillabaisse looked I have to admit I was disappointed at not seeing any of that fresh Yellow Jack served raw. I will patiently await your next Yellow Jack for that to happen. At around 9min. into your vid. You said you never had roasted a pepper before. Here is a tip my grandma taught me. Place peppers on the grill. When chared on 1 side turn and do the same to the other side. But wait we are not done yet. Put peppers into a paper bag and let them sweat for around 15 min. Then under cool tap water peel the burnt skin off. Perfect roasted peppers. Very easy

That's an enormous diamond on your fiancee's finger! You are incredibly prolific and do great videos of catching ENORMOUS fish sometimes not that far offshore and then you cook them, and share them with friends and family, all on video, which means everything takes twice as long as in real life.
And we can see that your efforts are rewarded well. It's quite satisfying.

where do you hook the live ballyhoo? Your almost using a knocker rig except that you keep the weight from the hook unlike a knocker rig. I like your rig but in Key Largo when your mutton is being followed by a shark or a cuda, it's not to practical to be pulling up all that leader, but I understand why you do it and it clearly works. Great video. Vegeta is the best

Absolutely KILLER catch & cook work Viktor! I've been a huge fan of yellow jack since a pro Key's captain showed me how great they are to eat with a side by side 1 on 1 taste test vs yellowtail snapper at an Islamorada hook n cook eatery 20+ years ago. Great stuff and your bouillabaisse recipe is awesome! Cheers!

RANDOM request but I would absolutely be interested in a house tour! Your kitchen is so big and beautiful that I would love to see the rest of the house attached to it: ) It doesn't have to be an entire video but when you're back at the house cooking, a quick walk-thru would be cool.

Hey Victor, it would be awesome if you would do a catch and cook on a stingray and a carp! If you can make these two fish taste good you would be legend! And both of these species are taking over their respective ecosystems because they're everywhere!

Ive been wanting to do a bouillabaisse ever since I saw Julie Child do it on The French Chef. You can watch it for a cheap sub to pbs on prime. Seriously changed the entire way I cook, I think you guys would love it. Check it out!

nice little cooking tip never season your food if steam is coming out of the pot it will make your seasonings get all clumped together inside the container
