I kinda clean the doves the same way. Take it with the breast facing you take your two thumbs and put them together on the breast bone and slide down and all feathers should move out of the way and then just take your thumb and lift the breast up and then you can take scissors and cut the wings off on the sides by sliding them thru where the breast was and the neck. Great video by the way!

Been a long time since I have had dove I always fried mine going to try this next season if I can find a good place. Not about to pay that high cost FWC charges to hunt dove. Thanks and keep them coming.
