It's not your usual, but it was a useful video. I agree about not always filleting fish. We usually grill Pompano whole, and as you mention, cooking whole fish is kinda the norm elsewhere.
I'd like to see a video entitled Maximize Your Catch or Getting the Most Out of Your Harvest.
Thanks, Fish On!

Awesome tip. My father in law, off the boat Italian gets pissed if I fillet. Cook whole in a pan or on a grill stuffed with lemon and herbs. The head, shoulders and cheeks get cooked down in a stock and made into risotto. He can feed 2 people on a 12 to 14 inch porgy.

To get more of the guts in that method, you can cut a small incision near the anus and cut the tough white membrane that is like a bag for everything in there. Then when you pull out the gills, it will come out in a nice travel bag. Lol! When you get it right.

Some of us guys down here in aus fishing for tuna do very similar. Only additional step in the process is to cut around the anus. Otherwise you're at mercy of the poo gods as to where the intestine snap. May be a bit trickier on a small fish like a redfin

who says ya can't teach an old dog new tricks. Apparently it all depends on the dog and the trainer. Yup!
Cool trick thanks for sharing the tip (and the redfish with the swamp, lol. Tight lines and fun times. Peace

I do this but prefer to stick my knife in that slot. I also prefer in the warm water of Louisiana to keep them alive so instead of using a stringer I use a tethered net laundry bag to keep my fish.
