Affordable? Once you add a 150 dollar audio interface it's no longer affordable for many people. The reason you need an audio interface is because it requires phantom power. If you're going to do that always go for an Audio Interface with a USB output. If you plug into the analogue jack on a PC it's likely going to have a lot of background noise regardless because they're not built to isolate RF noise. A much cheaper option would be a USB condenser microphone like the Audio-Technica AT2020USB+. It can be had for as little as 120 USD. And an even more affordable option would be the Samson Go Mic at 30 USD.

For $100 the Blue Ember sound's awesome. Right now I'm using a $30 Samson mic and it sounds good for what it is once I apply the filters to it. I do eventually want to upgrade but this is all I can afford right now. But I don't despise small beginnings.

There is a difference. Old one is sounding stable, clear, and weighty. Matches with your video quality.
New one would be good if you wear some linux mascot mask and speak. Its sharp light and not matching to your vedio quality.

Maybe if you're listening in a perfect environment you'll notice a significant difference but through a phone with a bit of background noise they sound near identical and that's the way that most people will be consuming content

With the raw audio test, Blue Baby is quite a bit better. The Ember sounded a bit muffled by comparison. Once you ran Ember through your standard equipment later on it sounded perfect!
