Cropping as a basic funtion, is not something we should be looking for in a how-to-video yet here we here are.
Seriously, illustrator makes things unnecessarily complicated. In PhotoShop cropping is a 100 X easier.

How do you actually crop the edges of the subject of an image to remove the background? For instance if i had an image of a person at the beach and wanted to crop the image so only the person is visible and not the beach?

This tutorial is terrible. You're talking to someone as if they already know Illustrator. The accent and mumbling doesn't help.
