the real problem with a vegan diet and lifting and maintaining size and strength is that you have to supplement, iron, protein, vit B12, BCAAs and have to eat a lot more to get sufficient calories. I believe from my experience and research that building an optimal physique will always be better on an omnivorous balanced diet with lean meats, complex carbs and vegetables. However in terms of pure performance, once that physique has been built a vegan diet will be better as the body uses less energy to digest vegan food decreasing your metabolic caloric need and inevitably your diet will be much higher in carbs to make up your caloric need and carbs (glucose) is what the body uses for energy. But for someone who wants to build muscle naturally a vegan diet will be inferior.

I get you're wanting to be super healthy and all but this type of purism definitely isn't sustainable long-term especially considering the amount of calories you're needing to get in per day. I know this was just a single day and we don't know the full scope of your diet, but I'd definitely recommend adding some minimally processed protein sources like tofu/tempeh and if you don't want store bought sauces, making some yourself at home (plenty of tahini/cashew based sauce recipes online that'll help a lot with getting enough calories too. It's great you're giving veganism a go, just don't want an obsession with perfectionism in regards to health to be the reason you end up quiting (it happens to a lot of people. Regardless, all the best

You know that the combination of rice and beans make a complete protein that is equally as good as the protein in eggs and beef and so on, right?
