Raw till 4 Diet Vegan Potato Gnocchi!

Raw till 4 Diet Vegan Potato Gnocchi! Ready: My potatoes don't fall apart if I peel and slice 5mm thick before cooking. I cook in only an inch or less of water - in other words I steam them. By time they are finished cooking, there is just a little water left. If there is too much, I remove the potatoes and then boil the water for another minute or 2 until there is only about 4 tablespoons left. It will be a viscous liquid. Stir it into the potatoes before ricing them. The water contains much of the micronutrients that used to be in the potatoes. For best nutrition, I think it should be consumed. You can tell if the slices are cooked through just by the color. After about 5 minutes they are cooked through. You can cook another minute or 2 if you like them softer, and easier to rice or mash. The slices remain whole when I cook this way, but if they broke up a bit - mashing so it doesn't matter.
Of course the gnochi must be boiled. Steaming won't work for these. Some of the nutrients will go into the water. But they cook through in only about 2 minutes.
It is hard to peel hot potatoes. Burns your hands. That's crazy, right?

I've been eating a high-carb vegan diet (not exactly Raw Till 4 but close) and I've already shed 22 pounds in just under 10 weeks! I weighed myself for the first time this morning since after Christmas and couldn't believe it! What an awesome side effect of going vegan. :) This video looks like my normal dinner of GF pasta, some veggies, and yummy pasta sauce (no oils either)

I had those a while ago and they were absolutely delicious! Also works well, if you partly use sweet potatoes (adjusted the amount of flour though. I absolutely love sweet potatoes and it was freaking delicious and tasted a bit more exciting than the plain ones: )

Hi Freelee: ) I just wanted to ask what your opinion of unbleached white flour is? Do you eat white flour or do you think it makes you fat? Thanks! If anyone else can answer to this with their experience with white flour that would be awesome too: )

Just for you information; Traditional gnocchi couldn't be made with potatoes, because the potato plant had been introduced to Europe as late as the 16th century. Originally gnocchi had been made with semolina porridge-like dough and eggs.

Made it last night. Sooooo delicious but I had to use a metal strainer to rice the potatoes which was quite a pain. Still totally recommend it. I ate it with mushroom sauce I made with coconut milk and nutritional yeast.

Freelee, next time you make gnocchi you should try baking the potato instead of boiling them. It makes the gnocchi so much softer and less chewy. 10/10 would recommend.

Nice I'll try it! I tried some from the grocery store once that were vegan but they tasted like the plastic they were wrapped in, quite nasty so I threw them out.

Omg I can't wait to make this with my grandmother! We both love gnocchi and she's trying to go vegan with me after seeing me lose 50 pounds on a vegan diet.

can you use anything other than I potatoe ricer to get the dough? I don't have one, but this recipe looks amazing, and really want to try it.
