You stick cookie dough into an oven, and magically, you get a plate of warm, gooey cookies. Except it's not magic; it's science. Stephanie Warren explains via basic chemistry principles how the dough spreads out, at what temperature we can kill salmonella, and why that intoxicating smell wafting from your oven indicates that the cookies are ready for eating. I hope they also included how important the steps are in baking, if you mess the steps up your cookies are doomed. like you cannot mix the flour with egg first or the mix the sugar with the flour making it cakey, the gluten content of the flour (ex. afp, cake, bread, flour, how long you mix the sugar with butter will determine how crispy the exterior is.
