Smoked Spatchcock turkey wins. Cuts cook time way down by getting rid of the cavity, you get better smoke penetration on the meat because it exposes more surface area to the smoke, you can still make gravy by roasting the cut out backbone, and above all, smoked turkey slaps. 10/10 southerner recommended. Definitely going to try a dry brine this year though.
Also making a stock out of a smoked turkey carcass will change your life.

Vegan carrots are also really good with soy sauce and maple, and I actually love brussel sprouts in red thai curry, but that's really untraditional.
On the pie dilemma: maybe you could bake a bigger pumpkin pie and a mini/smaller apple pie, bake both, cut out the center of the baked cooled/set pumpkin pie in the size of the apple pie and insert it?

I'm making those brussel sprouts with that sauce tonight. But I'm doing it in the sauce pan, because I don't trust myself to just eyeball the proportions and nail it in one try.
I assume that one guy was asking why people give out the frozen turkeys literally ON Thanksgiving, since the beneficiary won't be able to cook it until Saturday.

I love them. They have vastly different personalities, but I really enjoy how professional they're acting as chefs by making slight compromises and not dismissing each other's ideas (e. g. When Brad suggested they use a bowl for the sprouts instead of a pan, while still going forward with Chris' ideas for the dressing.

Tip for deep frying a turkey. Before you start prepping (brining) your turkey, put it in your fry kettle, and fill it up with water, until it covers the turkey completely. You want it at most a half inch submerged. Take your turkey out, and mark the level of the water. That-s the amount of oil you need.

Tryptophan in turkey making you sleepy on Thanksgiving is a complete myth. -However-, you do get sleepy when you eat lots and lots of food, a -food coma-, pretty much regardless of what kind of food it is. And if you're doing Thanksgiving right, a food coma is your reward!

You can also use white granulated sugar as a pie weight and then use the slightly heat browned sugar in a recipe for depth of flavor. Don-t let the sugar touch the pie shell as fat will affect the quality of any meringue you make with the sugar.

For thickening gravy you can use a fine mesh sieve and dip it in the gravy then pour the flour into it and stir. Clumps will get pulled out by the sieve and thick fluid will pass through.

I am surprised that this dry brine gives crispier skin myth still holds up.
While it is true, it makes it only easier to get a crisp skin. Temperature control is the real secret here.

Brussel sprouts in maple + dijon sauce is a great alternative sauce as well. I recommend for those out there who haven-t had non-steamed sprouts (aka the gross way to cook them.
