Eating one's own flesh to survive doesn't make sense - like cupping water in & out of a bucket doesn't add more water to a bucket, or swapping 2 AA batteries within the same device doesn't add more energy to the overall system.
What may be more realistic is James eating poisonous critters or plants - taking the poison hit for a nett gain in energy & sustenance.

Honestly, Hugh Jackman's Wolverine is combination of Both 616 Wolverine and Ultimate Wolverine.
Not to mention, That Wolverine had a Son named James Hudson. James Hudson even Met Daken and X-23. Fun fact: James Hudson, Daken, And X-23 are all children of Wolverine.
