I m honestly surprised the Esterosa and Escanor encounter wasn t here. How much more of a flex do you want when a human walks up to one of the most powerful demons and when asked why he wasn t effected he hits back why would I hate someone who is clearly weaker than I am as he just towers over him. THEN when Escanor goes for an attack Esterosa counters it and Escanor is left with a minor cut and goes Huh, no wonder that hurt, I must pack quite the punch
Probably misquoted those lines a bit, but Escanor was MAD flexing.

I would say Megido from That Time I got Reincarnated as a Slime is definitely missing but I think it was in another one of the flex videos already. But if you consider that not flexing enough there's the time he literally ascended a demon to demon lord status only to erase him with one attack.

Madara's rampage will always be iconic and the meteors his ultimate flex. The fact that he smoothly took down so many foot soldiers and the best of the alliance makes him legendary, perhaps more than any living Ninja. All while undead.

The term restraint and vegeta in the same sentence isn't ever gonna Work. And that is the result they're lucky that was the only thing he destroyed. So even though the machine got pulverized at least the stadium was still there.
