I have a canister of what I call my Frankenspice that I put in my chilis, and I literally have no idea what's in it. Every so often I just top it up with whatever catches my eye and shake it until it's well mixed. Right now I'm seeing some sesame seeds, what I think might be nori flakes, oregano, some Old Bay, probably a bit of some ALDI spice blend, a healthy amount of turmeric, and who knows what else. Add that alongside the big four of cayenne, onion powder, garlic powder, and paprika, as well as a healthy glug of your hot sauce of choice, and you're set.

A lot of cooking shows are overly prescriptive ( this is the only right way to do this. This feels over-cranked in the other direction, in a way that feels forced to conform to a pattern that was established in past videos, while still being very opinionated. Like, if you want to use only beans, go for it! If you want to use meat, go for it! We have yet to produce a cow that only produces prime ribeye steaks, so I think it's great to highlight cheap cuts of meat that you might otherwise pass by at the supermarket.

In the modern world, food isn't just for nourishment. We eat food to enjoy it. If we don't enjoy eating it, why even bother eating food to begin with? Trying to force yourself to eat food you don't like is pretty much how eating disorders form.

One of the few times I disagree with Adam. Not that I mind a meatless chili, but I do think the addition of at least ground meat makes it noticeably yummier, and the addition of some slow cooked piece of beef is even better. Also, while beans are definitely more sustainable, they are not universally healthier, adding in some lean animal protein can be great for you.

so gratifying that you mentioned chocolate. a bit of unsweetened cocoa powder is a good substitute for chocolate chips of you have one and not the other. another similar addition borrowed from curry is a medium pinch/half a tablespoon of instant coffee if you've got it around, a really good and easy way to make the chili taste way more effortful than it actually is.

By the way, this is actually what authentic chili is. It is whatever you have to hand prepared as a spicy stew, basically. It's like Texmex fried rice. I used to be a real no beans purist about chili but like. why? Beans and tomatoes are good. Eat whatever you like. It's your chili. Dump some curry powder in there. You're welcome and I'm not sorry.

LOL yeah. I have a simple quick chili, it is onions, a can of red kidneys, tomatoes, mashed Sanitarium Nutmeat, and taco seasoning. Probably a travesty to Americans but good for my Aussie aft. Needs IMO to be eaten on corn chips with cheese and salad the includes some avocado, jarred salsa, and sour cream. Good psuedo-Tex-Mex food.

Solid video. I've always been a big fan of veggie bean chili, made to basically this exact recipe. I also like to add a generous splash of Worcestershire sauce or Henderson's relish - not sure how available they are stateside though. Also a couple of limes cut in half and chucked in the pot add extra tangy sourness and flavour.

I make chili all the time and like putting in extra beans. I always want meat in my chili though. Meat stews so amazing. Its very missed when it s gone. I love using beans to extend meat. Meat is getting expensive!
I like lifting heavy weights 5 days a week and want the protein: P most people don t do this of course.

Sub your fresh peppers for dried anchos, sub your chocolate for cocoa powder, use mustard instead of mustard powder, use ketchup to provide some of the tomato sweetness (I use spicy, not very sweet canned tomatoes, and add ground beef (with ALL of the rendered fat mixed into the chili) and you've got my standard chili.

I grew up poor with a limited range of food options. I thought chilil HAD to have beans to qualify as chili until I was probably 20. I thought if it didn't have beans it was either a lesser chili or goulash. Chili was all bean all the time and then sometimes with meat and sometimes without meat.

Some bean juice tastes disgusting. idky, but it does. Maybe it's just the brands I buy. My go-to soup is TJ soup with added carrots.
Super simple and healthy enough to not feel bad about filling your belly. Takes 5 minutes to prep and 20 minutes to cook. I've had it every day for 2 weeks now.

Exactly. My company just had a chili cookoff, and from my perspective, it didn't even look like anyone made any chili. Some of them were just meat dumped into a crockpot with no seasoning. What the heck? My only difference would be tossing some potatoes in and taking out the chocolate.
