We could all do with a little pick me up right now and these Hot Chocolate Cupcakes will do exactly that. These decadent moist Chocolate sponges are filled with Chantilly Cream, iced with a 2-tone White and Milk Chocolate Buttercream, drizzled with Chocolate Ganache and topped off with a toasted Marshmallow. YUM! 12 Cupcakes Preheat Oven to 150C fan assisted (170C non fan) 2 Small Eggs 125ml Buttermilk 125ml Coffee 105ml Vegetable Oil 140g Plain Flour 185g Caster Sugar 35g Cocoa Powder 35g Choc Chips 1/2 tsp Bicarbonate of Soda 1/4 tsp Salt Buttercream 300g Soft Unsalted Butter 500g Icing Sugar 100g Milk Chocolate 100g White Chocolate 3-4 tbsp Whole Milk Chantilly Cream Filling 100g Double Cream 15g Icing Sugar 1/2 tsp Vanilla Ganache 50g Double Cream 50g Dark Chocolate 12 Marshmallows!

I love you guys! This year was epic with so so so good recipes from english classics, french recipes, huge cakes, and most important mindful bakes! Also this year saw jemma back! Cant thank sam, sally, dane enough to stick with us the whole year and provide us yummy recipes i love you. cant wait for what you have for new year! I don't have a blow torch - could I put the marshmallows under the grill and them lift them on to the cupcakes? (That would be ideal for topping cups of hot chocolate too)
