So Jemma I have a question. The other day I made ordinary vanilla cupcakes, followed the recipe measurements and such, and instead of getting 24 cupcakes out of my batter I got 12. And they weren't too large they were a perfect size. Now the only thing I did screw up was I creamed the sugar and eggs and all that in one bowl, then poured it into a bowl of flour and beat all of that together, and once it was incorporated I proceeded to add my 1/2 cup of milk all at once and beat it up. Now is this where my batter went wrong? If so how did this reduce the volume of the batter by half?

Hi Jemma Loving your cupcake/cake series. Just got back into baking and decorating cakes and Im finding your series of videos really useful. In fact - Im addicted One request though, I live in Germany and cant get hold of self raising flour. Could you mention how much baking powder to use if you only have plain flour available? Im sure you have many viewers from outside of the UK who are in a similar position, and this would be very much appreciated by all concerned. Keep up the cheerful and zany comments Tracy

Kahlua is my favorite liquor. Although I am not much of a drinker, I do occasionally like a drink called Smith and Kerns. It is kahlua and half and half over ice and a big splash of Coke on the top. I know, sounds weird but that splash of Coke makes the drink foamy and creamy delicious. I'm not a fan of Vodka. Maybe I will just add extra Kahlua instead or add coffee or even Coke? I have made two of Jemma's recipes recently and have found they overflow the cupcake shells by quite a bit. I think the self-raising flour in Canada must be stronger (more leavening) than the stuff Jemma uses in the UK. Next time I'll use the self-raising flour without the added baking soda and failing that use AP flour with a bit of extra baking soda. Has anyone else had this problem in North America?

Hi Jemma, I love baking your videos as they are easy to follow and the cupcakes are so yummy Do you have any tips on buttercream icing? Ive watched your buttercream icing video and follow it to the tee. But I think because I live in tropical hot and humid Indonesia, the icing is always runny even before I am done mixing them. Would be great if you have some tips or tricks to share Thank you so much

+CupcakeJemma In US self rising four has quite a bit of salt in it as it is commonly used to prepare what we call biscuits. If I were using all purpose (plain) flour should I leaven this recipe with baking powder or sodium bicarbonate? Thank you.
