I found the exact same recipe in food 52 - King Arthur flour pizza recipe( 7 MONTH ago IT was releases. They only don't use the tangzhong.
Result looks the same.

That dough is SUPER strange for a Brazilian. Our pizza dough is supper thin and dense, no bubbles and air like yours hahahaha
