Masterchef John Zhang shows you tips on how to make Chinese sausage and pancake at home with step by step instruction. Recipe: Chinese sausage – lap cheong (Cantonese) lchng (Mandarin) is a cured sausage normally dried in air or smoked over slow burning fire. The sausage is used as an ingredient in many dishes in some parts of southern China. Tips: 1. Like other traditionally made dry sausages, for example Spanish chorizo or Italian salami, Chinese sausages must be dried until they lose about 35% moisture. 2. Chinese sausages can be only air dried in fall or winter when the temperature is under 1012C or 5053F degree. After drying, you need to transfer them to freezer for longer keeping. Chinese pancake is one of the famous and traditional Chinese street foods and ideal Chinese breakfast. Many Chinese restaurants in the world serves this lovely pancake. However, making some at home is a nice experience

Today I tried to make this Sausages are you sure for the measure of salt? I just put only 5 Tbsp to 1 kg pork even less than your recipe that I should to put 1 Tbsp for 100 g pork that mean 10 Tbsp of salt. It was too salty still so I just put more 5 Tbsp of sugar now after I tried it I think better I should stop and buy some more pork to put in it otherwise it will be the waste. Do you have some advise?

Nice artistic movements as you cut, slice, dice, chop, knead, cook! It’s such a pleasure watching you create such delicious dishes. Wish I can bite through my phone to eat it!
