Just a correction to your statement about Texas mostly serving all beef sausage. That is primarily true outside of the Golden Triangle between Austin, San Antonio, and Houston. The Area between 290 and I10; however, is influenced primarily by Czech and Polish immigrants that arrived between 1850 - 1900 and are known for pork/beef blends and even in some cases 100% pork sausage, especially during times when beef is expensive. Rule of thumb if it's a Barbecue joint ran by Central Europeans it's more than likely going to involve a beef/pork blend in Texas.

Watching this you will think Franklin is just a hipster place and their barbecue is not unique or special and has the same taste as the others. So I thought eating everywhere else (including the restaurants shown on this video) thinking I am not really missing something special. Boy I was wrong when I finally endured the line and tried their menu. Ate twice there already and no doubt in my mind: the brisket, beef ribs, and pork ribs are the BEST in the WHOLE WORLD. There is a reason why the line is always long. Can't wait for my 3rd visit.

La Barbecue is my favorite with Franklin's being a close 2nd. I was so happy when La Barbecue opened up near my vacation loft. I can't leave Austin until I get some food from there. You can't go wrong with either place. Wish we had something similar to that up in New York City. Virgil's, Dinosaur, Hometown, Dallas, and other BBQ places in Manhattan/Brooklyn can't compare. If you're looking for a vacation spot, just going to Austin for the BBQ is worth it to me. Definitely check it out.

Franklins is amazing but the first time I went there I didnt even know what it was and was pissed we had to be at a bbq at 8am to eat lunch. It is amazing but unrealistic to expect people to constantly wait that long to possibly get food. And the worst part is that people start cutting and you see others that know the people that work there and go in through a back door and get their food in 5 minutes. That was my biggest issue with franklins.

My daughter moved to Austin a couple years ago. Have visited her twice. Love love Austin. People are super nice! Franklins wait was over an hour. She lives on first st so we went to Terry Blacks. Food was great w all the sides & of course Texas beer, Shiner. Also like Ruby Red Bird grapefruit beer. Ann Richardson Congress St bridge bats were amazing. Barton Springs, capitol, and of course Torchies for a wrangler. The best breakfast ever

I'm from Austin and Franklin's is far from the best of anything. If you ever visit Austin eat at Franklin's first since it's advertised as the best and then try these places. Iron Works Barbecue on Red River and Vic's BBQ. Both places are better than Franklins, Franklins is all hype and long lines.

I had it once and never again I got really sick and was in the hospital for 6 months. The dr took a stool sample and found bacteria on some left over food also in my poop. I'm not the only person this has happen others have pass after eating here. Stay safe and avoid a 350, 000 hospital bill

Im not following this line around 6: 00. You come to this place for the brisket. You go to the other places for the history. I always go to the best option in an area for the brisket. line or no line! Ill take pictures of the history but eat where the best is served.

He did not mention Stiles Switch BBQ. Best BEEF ribs ever. On another note, if you order Franklin's months in advance, you can walk up an pick it up, no wait. You pay when you pick it up. You just have to know what you will be doing months in advance. Not a bad deal.

Texas Monthly says the best is Snow's in Lexington, Lee County. The pit bossis the 73 year old head custodian at Giddings Middle School, everybody calls her Tootsie. They all have full time jobs and ht's why Snow's is only open on Saturday.
