How an NYC Sushi Chef Prepares 300 Takeout Omakases Omakase

Like so many chefs in the pandemic, Kissaki chef Mark Garcia needed a plan for weathering the shutdown of his four sushi restaurants across the New York area. That s where his stellar omakase to-go boxes came in, which became a huge hit. Between the restaurants, his teams make 200 to 300 boxes a night filled with bluefin akami, kamasu with tomatillo, aji topped with herbs and miso sauce, and more. sea: To be honest i won't trust any restaurant about COV contamination, and i am a Chef. There is so many ways to cross contamination, then it is almost impossible to guaranty food COV free, Period!
Between, raw products and delivery to your plate or your box. i will definitely recommend, not to eat from restaurant sadly. And also it is a big concern in home food cooking also.

I think the industry will be irrevocably changed, there is no going back to pre pandemic times. Delivery will be an accepted standard, especially as higher end restaurants find interesting solutions to allow people to recreate that experience at home. Places are using beautiful disposable packaging or nice reusables like tiffins. To go will naturally be apart of Michelin starred places. Also now I'd really like some of his sush

i mean even the highest quality sushi is just going to DIE unless it's kept refrigerated all the way to the doorstep. All food dies in all the time it takes for delivery people to pick it up and get to you, especially when they take chained orders, but sushi is the absolute worst to have delivered.

A lot of these restaurants are closing but the restaurants who figured out they could do this and be successful are making more money than ever because there is no seat capacity, this will be the new normal, hope you already like UberEats
