Very on-point series thus far! As a former supplier of Wataru, Zilla Sake House, Nimblefish, Kamonegi, and Sushi Kashiba, I fully agree that all these restaurants deserve to have been featured in this amazing series. Eater, check out Taneda (Chef Hideaki Taneda) in Seattle, Sushi Kappo Tamura (Chef Taichi Kitamura) in Seattle, and Sushi Nakazawa (Chef Daisuke Nakazawa) in New York, they are all worthy of a piece as well in this excellent OMAKASE series. I had the pleasure of eating at Cagen a while ago with my family. Absolutely astounding experience. The cards in the video are the ones that he showed us before each course, and it was such a pleasure watching a master chef prepare everything right in front of us. I was dreaming of fish for days afterwards. I highly recommend Cagen for anyone in the area!

I can honestly say that Cagen is one of if not the best omakase experiences I have had. Just watching the chef prepare food right in front of me was such a blessing. So sad that it did not retain its one-star rating this year, because it seriously is so much better than many of the other Japanese restaurants on the list this year

I've been once for the omakase and it was fantastic. We got there just at opening, sat at the counter and he spent the entire meal mostly serving only us since almost no one else was there yet. But he's not very talkative!

The sole reason why Omakase-Style sushi always expensive is because you didn't pay for the food but for the skill of the chef, most of Michelin star sushi chef had an experience more than 20 years.

I just love the dedication perfection a sushi chef puts in process. Hats off. Seen of of cooking but this one is unique. The art of identity the freshness and quality of the fish is awesome.
