Great creation. I know most people think only true traditions Japanese style will be call perfect. But in America it's about creations. You do what you got to do for your consumers. I think you did a great job. That is survival skills! like it or not. Kentucky fried chicken taste different in every country but they all recognize what is Kentucky fried chicken restaurant about. We can't stop the world from spinning, but only to catch up with the world on what they demand. Good luck and hope one day I can taste your beautiful creations of the food you feel for the people around you. Tx.

This is great! I got to eat at Otoko last January. The best omakase experience I've ever had, by far. With the best sushi I've ever had. Chef Yoshi was the one who served us all night too. The highlights to me were; Kanpachi w/ meyer lemon zestShigoku Oyster w/ yuzu ponzu, smoked steelhead roeHirameHokkaido Uni (GREATEST EVER OMG)MadaiChawanmushi w/ maitake, shrimp, ginko nut, mitsuba, jamon Iberico, truffle oiland for the greatest dessert course ever, Uni no Ikari (wrath of uni) which is Uni Ice Cream. This meal alone is worth the entire trip to Austin. I plan to return someday.

Hey Im from osaka and I would definitely love to try his food. I know the fact that we, Japanese, tend to like keeping traditions as it was and is and yeah its important but still I would love to see something new as well. Its unique. Much respect to him. P. S. Japanese dudes saying that dont wanna accept his style, I believe he doesnt need customers like you either so dont even worry.

Also worth noting: I cooked alongside Yoshi for several years, and he is the nicest guy. Defies every stereotype about yelling, hyper-masculine male chefs. He's humble, self-effacing, gracious and very funny. Was a great mentor and is such a good example of being really good at something but not letting it affect how you treat others.

Self taught unlike most sushi masters, this guy has his own unique style. He really doesn't care, it definitely looks like he is enjoying what he makes and accomplished. The way he smiles tells you how humble he is. Americans are a big bowl of mixed cultures and this guy is every bit of it

Wait wait. did anyone else think he was speaking Japanese throughout the whole video and thought you could understand it without subtitles and just thought, whoa I can speak Japanese. but then realize after awhile hes just speaking both Japanese and English mixed in together.

I'm a Korean teenager who want to be a sushi chef. Since I had that dream, I always wanted to go Japan and learn how to make sushi. But this chef made me change my mind. Now I really want learn from this chef. Also I respect him about that he learned cooking by himself.
