We'll show you some easy tips to make the risotto of your dreams! Stop: The video is wrong about broth temperature. The broth should be boiling. If the broth isn't boiling, when you pour it into the pan, it stops the rice from cooking. Do this repeatedly and it destroys the surface of the rice grains. On the other hand, if do you use boiling broth, it comes out magically creamy. I used to use room-temperature broth until I tried boiling broth and now I'll never go back. (Or actually, I switched to making it in the pressure cooker since it's much more time-efficient)

Well done, this is the essence and variation of risotto. I also make it with champagne and cantaloupe or honey melon and a bit (not too much) of prosciutto for the summer. Or prosecco or pinot grigio, strawberries, preserved green peppercorns and a drizzle of balsamico vinegar.

Or you could do it the right way, boiling the broth and using extra liquid while never stirring,
because creaminess isn't the same as pastiness.
Also cheese isn't often served with seafood in Italy.
