We challenged chefs of three different levels - an amateur, a home cook and a professional chef - to make their versions of lasagna. And then we brought in a food scientist to review their work. Which Lasagna was the best?

Frank's version is more similar to our Italian lasagne bolognesi.
In some areas, people will add pancetta or lard to the minced meat, and in Naples, they also use prosciutto and mozzarella.
To be honest, lasagne can be made with anything, as the name stands for the pasta: there is lasagne al pesto, ricotta&spinach lasagne, vegetable lasagne etc. all sorts of variety!
Anyway, the original recipe for lasagne bolognesi consists of:
Onion, celery and carrots all chopped in irregular sizes (some small, some bigger);
Minced beef meat (and you may add lard and pancetta too);
Sage;
Tomato paste and tomato sauce;
Salt, pepper and perhaps even sugar, depending on how ripe the tomato is (the higher the quality of your tomatoes, the less sour they taste);
Bechamel:
Butter, flour and milk;
salt, pepper and nutmeg.
And obviously, Parmigiano!

Definitely I have to say:
- Level 3 is the closest lasagna to what I am used to prepare (I am Italian and I prepare all by myself: meat sauce, besciamella and pasta. But please. Don't use garlic! .
- Level 1 is the lasagna for the beginner. But we can call it lasagna
- Level 2 chef. What is that! Soul food! Definitely Italian lasagna is another thing.

While everybody is entitled to elaborate his own recipe and eat it, I would like to observe that a real lasagna bolognese has no ricotta, no basil, no turkey, no mozzarella and no chunks of meat. Level 3 chef is the one closer to home base and level 2 is farther away.

One time I made lasagne with a bunch of ingredients that Italians would scream at me for, but my Italian friend ate all of it and was like damn this is amazing lmao

How on earth did they think a Caribbean woman would be qualified to be a level 2 lasagna chef. Her food looked less appealing than the stuff in my dogs bowl.
