Learn how to make Chunky Monkey Cupcakes Banana, walnut, and chocolate are an amazing combination no matter what the delivery system is, but it doesnt get any better than in this ganache-frosted cupcake. twosocks1976: Years ago, I worked at a large-scale bakery on the Las Vegas Strip. One of the things I had to make at least once a week was the ganache icing used for brownies and other Confections served in the coffee shop. All these years later, I can still remember the recipe. 3 gallons milk, 3 lb of sugar, half a cup of strong brewed coffee, 25 pounds of dark chocolate, 4 lb of butter, and 4 oz of pure vanilla extract. Awesome stuff, and I was always licking my fingers when I took the 60 Court mixing bowl back to the dishwashers. Never got tired of how yummy that stuff was. These Confections here look and sound awesome, and I might just add them to my next menu.

helpful tip if you forget to soften your butter but don't want to risk melting it in the microwave: get a ceramic container large enough to cover the butter, fill it with hot water OR microwave it with water (if its microwave safe, pour out the water (make yourself tea with it if you want, and cover the butter with the dish for 5-10 minutes. the heat will radiate into the butter without melting it into a messy pile

hey chef john i am a long time watcher, just wanted to say that i really love that old banana bread video, done that many many times, and i really love putting brazil nuts in my banana bread, the combination of brazil nuts, chocolate and bananas is fantastic. I think that some brazil nuts in these cupcakes would be really good as well: )

My partners granddaughter is going to love these. As a joke I always called her a monkey, even bought her a monkey onesie which she loves to wear, and she loves cupcakes. If the butter is cold I mix by hand as my hands will melt the butter much quicker.

I had never heard of these until a friend of mine did them for our specialty baking midterm last week (we had to take a cupcake recipe and make it vegan. What a coincidence As always, great video Chef John
