I have a question about butterflying my chicken first and then marinade? Is that a Bad idea? Would it more likely fall apart? Just try to buy thinner ones? I wonder about this often. Never had a popeye's chicken sandwich, but it looks a TON better than a chick fil a. for the life of me, I don't get the craze. It's so expensive and not so good.

I do chicken fried chicken a lot. Tip: with a big breast like this. keep the fryer at 300, not 350. Then when med brown put in 350-deg oven for about 15-20 min. This will ensure it gets done Even when I fillet the chicken breast I've been having to finish up in the oven. Can't seem to get it done enough by deep frying alone.

I love MSG even if it kills me. At Koya Japan I say YES to three scopes of MSG because I have a very fast hunter metabolism because I hunt. I work in popeyes and chick fil a in popeyes the chicken comes marinated already then we pour batter and flour in 2 big containers And they already come with who knows what they put in it we put chicken in batter then flour that it. In chick fil a the same but when we open the container it has a strong smell of pickle juice

Personally, I would give the chicken a few hits with a smooth meat tenderizer (not the ones with the pyramid-y bits) to make it a little flat. Not too flat, but enough to speed things up. I might also give the meat those shallow cuts as well. After all, I am the General Patton of my chicken flatten.

I went to Nashville this summer primarily to taste chicken sandwiches, tangentially for a cousin's wedding. Great stuff. Still, gotta say, and maybe I didn't try enough places, but I live in LA, and Howlin' Ray's was better than anything in Music City. Come at me Nashville.

I had the pleasure of working for Popeyes Corporate for 13 years- no corn flakes in their batter. Restaurants marinate the chicken for 15 hrs, then hand batter and bread each piece. Of course the techniques and spice, marinade blends are copyrighted and kept a secret.

I've seen people transferring a few drops of the wet dip into the seasoned flour (and mixing it) before breading the chicken. That way, small clumps or flakes of the breading form, which then fry up nice and crispy. Maybe that's the secret behind the cornflakes?

Popeye's uses a wet batter with 2 cups of soda water and 2 eggs, mix to a pancake consistency also added poultry seasoning to the dry mix. Dip in dry mix and then wet mix and then fry. I was a chef I Love your recipes and videos keep them comin.
