Making a great homemade chocolate ice cream sandwich doesn t seem hard, since it s basically just two chocolate cookies with some vanilla ice cream pressed in between, but while the construction isn t complicated, getting the taste and texture just right is. Here s how to get it just right. Philipp: I really respect your opinion but with a background in chemistry I can assure you that there doesn't exist any kind of analytic device that could differentiate artificial aroma which is identical to the natural one (if you purify it at least as the natural stuff is a mixture of hundreds of chemicals which might or might not influence the taste. The same goes for any soda you drink (the citric acid is basically produced by mold that grows on the molasses sludge. In the US they can use GMO mold too. Similiar scenario for insuline which is produced by GMO bacteria I believe.
FYU: you are allowed to label Vanillin that is produced by biosynthetic means as natural.

A tip I learned & wanted to share when making ice cream sandwiches, to prevent the cookies from cracking place 1 cookie on your fingers (not in your palm) place the scoop of ice cream on, then place the other cookie on top & with a push & slight turn you'll get a ice cream sandwich that's secure & without any cracks in your cookies. OH MY! Only because you mentioned it, I had to stop, open another tab and see what imitation vanilla is made of and I am shocked and stunned. Thank you Mamma for teaching me ONLY to use real vanilla extract (prefer McCormick Schilling but also like Watkins. How does the FDA approve beaver butt secretions as edible? LOL Size Queen! Somebodys been watching Rupauls Drag Race LOL

Are you going to make a homemade ice cream next? It would be the perfect compliment to start summer with these recipes. Especially if we have time to perfect them before the fourth of July.
(On a side note, did it hurt to not add a pinch of cayenne to this recipe)

chef Jon, love ur show, I ve been called and amazing chef just cause I follow ur recipes. . I use to work at an ice cream store. We would assemble ice cream sandwiches. A tasty trick is to spread room temp hot fudge topping on the inside of both cookies.

I had to laugh when Chef John mentioned artificial vanilla because I was just watching a video from America s Test Kitchen last night about comparing different vanillas and they disclosed what the imitation stuff is made of. Scary.

In regards to the comments about artificial vanilla: castoreum from the castor glands is rarely used anymore. However I'm not sure you want to be eating it anyway since it's synthesized from petroleum precursors nowadays

Giving this one a try very soon. I have a cake recipe that tastes an aweful lot like the sandwich cookies when eaten frozen and was trying to come up with a way to make it work for cookies instead. this might solve my dilema.

I'm not a shape shaker, but HOW could Chef John keep picking up the sandwich an then put it back down on the plate? It looked too yummy to let go of once you start eating!

AH One of my favorite's. I miss Ice cream sandwiches. Do you think this recipe would work with All Purpose Gluten Free flour? I have not had one in probably 13 years! Thanks.
