I always thought of fougasse as something you looked at, and not actually ate, until I started making them, and I realized they re every bit as extraordinary as anything else found in a French Bakery. The combination of the thin, chewy, crispy crust, and light, airy crumb inside is beyond additive. Yunus: Once we have what we knead - nice.
On a serious note, ATK had a high hydration pizza dough recipe, which they said didn't need any kneading. I wonder if this applies here as well, so you could skip the folding steps.

Ohhhhhh I d kill for fougasse right now!
I m really upset I left croissants, brioche and crepes at the store last night because I had gone bread bonkers in my hungriness.
Pretzels, naan, bagels and English muffins made it home to join pita and tortillas.
I mean I think I even have Belgian waffles somewhere.
There s just a limit.
But my god, if I could truly just live on bread

Anything with oil in/on it is not bread, it is a cake or something else. Otherwise it looks/sounds very nice, I might try some after eating some proper bread. :)

after adding the salt should it be pressed in to the dough? what other herbs could be used with (or without the rosemary) for different flavors?
