Two small tips for everyone who wants to actually try and cook this:
1) If you put the marinade into the zip-lock bag BEFORE the meat, you don't have to worry about two chops sticking together and not getting marinated properly
2) Liquid marinades are relatively bad at penetrating meat, so I would recommend salting the meat first, letting it dry-brine for a little while (3-4 hours, refridgerated) and then marinade it

there is nothing authentic in this video, just improvization in flavour, PORK is NOT one of the choice of meat in Indonesia, just few people and/or group of people eat pork. Im indonesian too. But that marinade looks kind of similar for SE Asia marinade

Please show us or at least post the recipe for coconut butter rice! I hate to be a commenter who hasn't made this yet, but alas, I am and just want to say this pork recipe looks simple and delicious and so worth making. I'm anxious to try this.

I've been to many restaurants in Indonesia and never seen pork. To call a pork recipe Indonesian Flavor is poor choice, considering it has the most highest population of Muslims in the world.

I can't digest pork, but this marinade looks like it would be fantastic on chicken and I DEFINITELY want to try that soon. My mouth was watering just thinking about this flavor combo!

I would like to marinate for 24 hrs then try air drying in the refrigerator. Would that work to get some crustification without destroying the essence of the recipe?

Chef John, where do you get your Fresno chilis? None of the big name grocers in my area carry those regularly. I can maybe get them once a year if I'm lucky.
