This amazing dip s name used to include another word that refers to an addictive controlled substance, and while we don t use that word anymore, it certainly fit. Once you start dipping, you can t stop. So, don t stop. It s a party, Or, at least I hope it s a party, and not you skipping work, sitting alone in a seedy hotel room, eating an entire bowl all by yourself. Either way, I really hope you give this a try soon. thesylvan: I grew up with Cowboy Cookies, which were cookies with basically all the cookie fixin s in them- walnuts, peanuts, macadamia nuts, chocolate chips, white chocolate chips, coconut, m&ms, raisins, dried cranberries, etc. I ve always presumed the cowboy in recipe names were just another way of saying stone soup, everything but the kitchen sink, whatever s in the fridge, etc. I think I like your explanation better.

Dude. I'm 6ft. used to weigh 175-180. than Pandemic hit. was forced to learn to cook. used you as a go-to for my new and exciting hobby of the culinary arts. tried these awesome exotic recipes. and I LARDED UP --- THATS RIGHT. IM NOW OVER 200 POUNDS OUTTA SHAPE AND CONSTANTLY WAG OUT ON YOUR RECIPES(I GOT A FITNESS PASS. AND AM TRYING NOT TO EAT SO MUCH. .LOL

I would just add this comment, that I would recommend using yellow cheddar cheese for this dish. The flavor will be the same, but the white cheese ends up making a funky, unappetizing pink dip the color of raw chicken. Yellow cheese makes the whole thing look more like a queso dip which people invariably can't wait to eat.

I live on a ranch. this particular dip had its start on ranch stove-tops. The Cowboy Crack name refers to it sometimes being referred to as Cowboy Cocaine. . meaning it s as addicting as cocaine-crack. You can t leave it alone once you start. So since some of you are thinking ugly things. get your minds out of the gutter.

No, at least I don't think so. I've always known the term cowboy, when used in cooking, to mean an easy recipe; i. e. Cowboy casserole, or Maddy Matheson's Cowboy confit, etc.
So I think the work cowboy in this recipe has to do with how easy the recipe is.

every single time i see a dip recipe from chef john, im constantly reminded to get myself a freaking kitchen blowtorch. god i love the top bubbly caramely layer so much, id just toss some extra shredded cheese and blowtorch the top just to relive it layer after layer again

My roommate makes something very similar for tacos; although it's chicken instead of sausage and sliced almonds instead of corn. Apparently the original recipe uses raisins and just sour cream (no cheese, but he despises raisins so I can't speak to how that tastes.

I need a Cincinnati themed dip for the super bowl. There is a skyline dip that is cream cheese layered with Cincinnati chili and cheddar but that needs some chef john magic to make it better or maybe make something completely new please.

I just made this it was super easy. I was impressed with myself as I was watching this sayin I have sausage. I have cream cheese. I have corn! Oh crap YESSSS! And oh boy is it better baked.
