Lebanese ladies cooked theirs on a steel dome, fire underneath, as you say it was stretched on the pillow and placed on the dome still on the pillow and as you did with the spatula, they tap it down with the pillow. It's over 38 years ago now, since I watched this being done and the sight is as vivid to me now as it was then. The lady and her little daughter must have baked a hundred or more before the sun came up.

Great take on MarkoukTry to use or mix in whole wheat. maybe cut down or better without the yeast. use the back of a unpainted cast metal wok. flame it on very high heat on like an outdoor stove. the wok will allow you to simulate the rounded Markouk oven and keep your bread stretched and thin. Oh btw, try it with grilled halloumi, bacon and mayonnaise keep up the good work chef John.

So last year, 2018, PBS had a series about Lebanese cooking with Julie Tabouli. And at the beginning she shows her mom with an outdoor oven and a big domed pillow, making thIs bread. And I recognized it now, because Chef John said that's how they make it there. Now it makes sense, and he found a way for us to imitate that

Chef John you are my favorite chef on Utube. That said I must tell you this story of woe. I tried this recipe, it was delicious. I made some for my friends at work they come from India. They firmly told me it was Naan then they ate some and saidit was just like India. That said thanks for the recipe for naan.

lol chef john you are funny. People still do social media in the bathtub and nearby. How many selfies are taken from the bathroom or there about. They just dont have time to cook homemade mountain bread. You are right that restaurant pitas are insipidly horrible.

You push on the bread with a spatula because it helps the bread make closer contact with the hot pan which creates more steam which helps to poof the bread up and cook it from within: )This looks yummy and would be great with hummus. I'll be making some asap.
