Soy sauce and hoisin have gluten in them. Also many chicken stocks have gluten in them too. I make a dish similar to this as a stir fry in a wok, but thats only because I like to make a ton at once. I also toss in broccoli and sometimes bok choy, but not needed. The veggies he uses are really good. Essentially I fry the chicken(or beef[or whatever you want, even tofu]) to get it seared in some oil a bit. I use canola. Then I set the meat aside, and cook down the veggies(cabbage is fluffy and as it cooks goes limp making more room. At that point you can add in the chicken and seasoning. I also like to add in onion. For the sauce/seasoning I usetamari brand(USA) gluten free soy saucerice vinegargarlic(but I cook that with the veggies)brown sugar(you could also try to use some honey if you like)smoked paprika or regular paprika(I too love paprika, but its no big deal to omit it)Toss that in with the veggies, add the meat back in, throw in the noodles and mix it all in, get it all nice and warm. Tada Done. A gluten free and potentially vegetarian version of what is shown here. I often will just eat it without noodles. But you can also pair the meat/veggies with rice if you don't want to do the noodles, but I highly suggest trying rice noodles. On the flip side getting a high quality egg noodle of your choice is just fine for this dish too. I did it many times that way before needing to avoid gluten. Its one of those dishes that is very flexible.

Just a note to chef john or anyone reading this if you have a friend that can't eat meat, instead of not inviting them to parties or gatherings, it would be nice to invite them but just let them know they would have to eat something beforehand. I've been left out before and it's sad: ( I'd rather eat my own food and come to the party to hang out rather than be left out

This would make a fabulous summer supper, especially the cold version. :D (Course, if one wants to avoid doing more than boiling the water for the noodles, I bet you can just mix everything into the sauce/dressing and then throw it in the fridge for a few hours, and call it a spicy Asian noodle salad. )

Actually some fresh rice noodles that you buy from the Asian supermarkets (the ones shrink wrapped in the styrofoam trays) have wheat starch in them to give them a more tender, gelatinous texture, so for those with allergies or cooking for people with allergies. ALWAYS READ THE INGREDIENTS LABEL

You know, I got the same dang problem with red pepper flakes. And it's shameful because I don't know WHAT peppers they come from. But they have a distinct flavor and I hear ya. Get some mangos and slice em up and sprinkle cayenne on them. mmmm.

Shredded veggies: A convenient way to make this is to stop at the local megamart on the way home, it the salad bar for pre-cut veggies and use pre cooked fried chicken or one of those rotisserie birds for the chicken.

I recently got ahold of some amazing Honey. Dark in color full of flavor with notes of Vanilla and florals. It is amazing just off a spoon. how do I showcase such a wonderful ingredient without it getting lost?
