Thanks Chef John, for a recipe I am sure to try. I love Saltimboca. I am one of those people who stopped eating veal years ago. And it was not because it was a baby cow; it was because of how they got that baby cow to be white meat instead of its natural pink. I would eat veal now if I could find pink veal in the market.

I think veal is a European thing. I have only seen it as an adult in Polish, German and Italian neighborhoods. never saw it as a kid. I believe its appeal is in its tenderness not flavor. most veal dishes are served in sauces are they not? never heard of a nice rare veal steak. Veal is outlandishly expensive to boot.

dear chef john, you may be one of the rare people that makes a living doing something they like. if it makes you happy to hear a story like this, my gf told me earlier that lobster thermidore was the greatest thing she had ever eaten. i copied it from here, without the cognac because i didn't have any.

with all due respect, to boil the stock and and it thick, the process is to evaporate water(moisture) the grease will not fly away. to add more water is only to dilute. I don't see the need to boil the so-called stock for 1 1/2 hour as that was not for the meat to absorb anything.

Hey Chef John, always forget I shouldn't watch your videos before lunch at work lol. I was wondering, I saw you cutting your pork on your cutting board, and you often cut raw meat on the board. How do you clean/care for your board to be sure of no cross contamination? Thanks

For those of you who are wondering, puttanesca refers to prostitutes who were thought to have invented the dish because it was quick to make and could be served to their customers. I never thought of a prostitute as someone who makes supper like mom, but in Italy.
