
Sweet Potato Pan-Dumplings with Bacon Butter

I'm not quite sure how this led to my kitchen excursion, but after seeing this vid, I made eggplant pancakes with eggs, Portobello mushrooms and artichoke hearts jarred in water and a bit of flour. I pureed the steamed eggplant, adding the eggs, sauteed mushrooms and artichoke hearts when it cooled, seasoning it up with a Tuscan garlic herb blend and fresh ground peppercorn. I added just enough flour to make a thick, ballable mixture. I formed the mixture balls into patties and fried them golden in butter. Even my picky eater dad went back for seconds.

It is a SNOWY day here in southeastern ohio (April 16) As depressing as the weather was making me feel. I made these absolutely BOMB fritters and eating these hot fritters gave me a whole new perspective on the scene outside my window. which was windy sleety SNOW: ( I went straight to the frying fritters in the frying pan and did not bother with the dumpling boiling stage. Bacon makes the world all better, so does sweet potatoes thanks for this one

Did you test the internal temperature of the pan-dumplings? Might it be better/safer to use very finely ground breadcrumbs instead of SR flour if you're going to skip the boiling step. Even small amounts of undercooked flour can cause digestive issues. ( it might need a bit longer in the fridge to come together ) Also, the bread crumbs have a bit of air in them so no need for the baking powder? Sorry if I'm just being too paranoid.

Chef John those remind me of a traditional east german sweet dish called Quarkkeulchen (also known as Syrniki in it's russian variant) which is very similar. I think your mistake was to use a to wet kind of cheese. Try to get hold of real low moisture Quark ( I know that is pretty hard to come by in the US, do not preboil them and make a dryer dough then I believe it'll give a better result.

Consider baking the potatoes in an oven until they start to exude this wonderful sweet almost syrup. You can cook sweet potatoes in a microwave until they are tender, but you will take them to an entire new kevel of flavor and texture by baking them. I am going to be making a pork tenderloin in a few weeks and I am going to make your pan dumplings as a side. Yum. Jo Ann

in Ukraine it's like a traditional dish. Except we don't have sweet potatoes so we use regular, then we rub it on the graters so you can feel the texture, then we put there everything you put + minced onion (sometimes in the middle of a dumpling we put cottage cheese, and when it's cooked we garnish it with a lot of sour cream. (I like sour cream)

Chef John, in South Africa most Afrikaans Oumas (grandmothers) have known pampoenkoekies or pumpkin-cakes (perhaps in the same sense as your American pancakes) for years These look almost identical. They are traditionally served with cinnamon-sugar, but I'm inspired to try something new after watching your video.

I made these tonight for dinner. They're pretty good - very tasty -but i used cream cheese and I wish I had used the goat's cheese. I'm going to serve with a little sour cream on the side just to mimic that sour element that the goats cheese would have provided. Another great recipe from Chef John
