Learn how to make a Butternut Bisque This easy butternut squash soup recipe is perfect as a fancy holiday first course; but also for a simple, and comforting weekday meal. ATLBrysco: Christmas Dinner 2017 was a Chef John menu with several of the items that he featured on Food Wishes. This was for the soup course and was easily one of the first OMGs of the evening. the soup is rich (even without roasting, since it was a course, creamy and completely satisfying even in small portions as a prelude to the next. I have also since then made this exact recipe with pumpkin which is just as easily fantastic. Thanks Chef for a great meal that still is talked about here at July 4th with all the guestsMINOR EDIT - For anyone looking to make this for a special dinner, I actually made this the day before and refrigerated it overnight. That way, as I was basting the ham every 20 minutes, I had the bisque on a back burner on low heat slowly heating up to temp; don't know if it made a difference or not, but I wouldn't want to use medium or high heat with all the cream in it that might scorch. It still made the house smell amazing and everyone loved it.

Thanks for another year of great presentations AND Merry Christmas (Politically correct, or not. Do you have access to a recipe for a German Christmas loaf called Stollen? If so, could you send me a link to it. I have misplaced my dear late Mother's recipe for it and it has always been a family tradition. I would like to carry on that same tradition in memory of a great lady and a fantastic genius in the kitchen. Thanks John, ERIC

Not a big fan of butternut squash, I only grow it for the squash bread I use for french toast. But I had so much last year and this year that I was looking for something else to do with it. Finally decided to try this recipe. The Mr. approved and declared it good, so kudos to you Chef John and thank you. I found it tasty but awfully filling - probably because I was using squash that I had roasted before freezing.

I just want to let you know Chef John that I have been watching and making your recipes since before I had kids. Now I have a 4 and 2 year old and many of your recipes are regulars in our home. Thank you for helping me learn to cook for my family (My mother never cooked for us, so I never learned that skill as a child. You can bet I am teaching my girls though)

Hello chef, Ive been following you for over a year and great videos. I just made your carnitas with the fire roasted salsa and everyone at the fire station loved it. Two questions, whats the difference between this bisque and a soup or are those words interchangeable? Second question, what would be a good main course if this is an appetizer? Thanks chef

I've made a recipe a few times and it has turned out well, except for once. I was out of normal maple syrup and only had the fake butter flavored maple syrup. I didn't think it would create that big of an issue since it already had butter in the recipe, but that fake butter taste was obnoxiously overpowering and ruined an otherwise good soup.

Hey chef John, I made this and it was so amazingly good I didn't have cream so I used soaked and pureed cashews and it worked beautifully, my husband had no idea there was no cream in it. I also cooked it in the microwave and then cheat-roasted it under the broiler for about 10 minutes. Thanks for the amazing seasonal recipe. Much love

Once I tried a pumpkin soup in a little tea house, and it was the best soup I'd ever had, nothing I've found since has come close. This looks very similar. Could this be seasoned with a little nutmeg? I seem to remember the pumpkin soup I tried had a hint of nutmeg. Now I wanna roast up some squash and experiment

This looks delicious. Never thought about adding pomegranite seeds--very pretty with the chives on top. If you roast the squash seeds I think it would be pretty as a soup topper. Thanks Chef John. You not only have great recipes you have a charming sense of humor that works well on YouTube.

Hello Chef John, you are my hero. I have a couple of questions. how should I thaw out a whole lamb of about 30-40lb, and how long you think is going to take? For Christmas Im going to try making barbacoa Hidalgo style but in a steamer. Thanks for all the great videos, and happy holidays
