I am very happy to show you my take on what I'm told is Morocco's most popular soup and once you taste it you'll understand why, since the combination of pasta, lentils, and chickpeas is so hearty, so flavorful, and so satisfying, this is without a doubt one of the best soups you'll ever eat. Motti: My late mom grew up in Morocco and cooked this for us about every week, especially in winter. This is a one course meal soup. I think this recipe leaves out several more vegetables. It's a little too meat and pasta here, while in normal Moroccan homes it's more like a very-rich vegetable soup, with some meat as extra-flavor and nutrition. Also I think this was just a little too much of the lentils and noodles - just a little. Anyways - hooray for bringing this soup to the stage! it's a formidable dish, fit for both celebration, and the simplest of winter evenings with yourself after work.

Yummm! Need advice: I am def not a fan of parsley. Does anyone have a good substitution? Or should I use all cilantro?
FYI I believe all of the spices Chef John uses are included in one mix called ras-al-hanout.

That looks amazing. I m definitely making this when it s Soup Weather Sunday. I think I d omit the slurry and add an extra cup or so of water. I like my soups a little more brothy.

Awesome recipe for upcoming fall nights. I am not a lamb fan but will try beef or straight up sans meat.
Apologies to the traditionalists but will give credit to Morrocans.

Dang allergies to the celery and onion family. I literally have everything to make this except 2 spices otherwise. (And the elements of nature that want me dead. Lol)

This looks awesome!
Although I love lamb, I've been eating Vegan for 3 years, so I'm going to make it meatless.
This just looks so delicious! Thanks!

Looks great! Just the thing for cold weather. but, I'd nix the pasta and use a finely chopped sweet potato to thicken instead. OR couscous.

You know the difference between a chick pea and a garbanzo bean?
I wouldn't pay fifty bucks to have a garbanzo bean in my mouth.

I am so making a pot of this when the weather gets colder. Thanks for introducing me to this one, Chef John. You're the best.
