Potato salad is the first food I remember eating, so I have a deep emotional attachment, but every so often, I crave something completely different and this Armenian-style potato salad is completely different, and completely delicious. Plus, unlike the American-style, it s safe left on a sunny picnic table for hours. Mayday: I have made so many variations of potato salad through the years. They are all good. I keep coming back to the canvas I like the most. it has hard boiled eggs, bacon, celery, parsley, onions, mayo, mustard, celery seed, s&p, and a bit on the dry side. But what I like the most of this recipe are the serving dishes. The pottery is beautiful.

If I were to make this salad and adjust it to my personal taste, I d have to adjust the mint down to zero because I really don t like it.
If I were served this in someone s home, I would eat it and not say anything, but I wouldn t subject myself to mint on purpose in my own house. Life is too short. I d have to experiment and see if I could swap the mint for another herb, like rosemary or dill. I might be able to deal with tarragon, although that has a anise-like aftertaste and I don t like licorice, either.
Still, even if I never make this, it s wonderful to discover cuisine from other places. I never knew Armenian had its own potato salad!

It never fails. Between Chef John, Babish, Chef Frank (protocooks, Joshua Weissman, and now Sonny (Thatdudecancook, I can always find a recipe that I want to make immediately. Chef John wins today! This looks soooooo good.
Chef John, you'll be happy to hear I haven't bought lemon juice from a bottle in over a decade.

Beautiful! I purchased some fresh potatoes from the Framers' Market recently and was thinking of making a potato salad for a Canada Day party this weekend. I'm allergic to egg so this will be the perfect contribution to the table. I so appreciate your videos, Chef John. Cheers!

I have made almost the exact recipe for years. What I do to tame that onion is to leave it in the lemon juice for an hour or so, then add the lemon juice and onion to the potatoes. Then just proceed as usual. (I also don t use cayenne because I have smol ones) Amazing.

When I first realized the flavor profile is potatoes, fat, lemon and mint, I was so disappointed Chef John used steak for the picture. His Greek Lemon Chicken and Potatoes is incredible. But I was the disappointment for not realizing it was lamb. Looks great.

In black households potato salad is often debated and eating anybody's potato salad is taboo. Some people just don't make it right. Im taking this to the next cookout. I probably won't get invited back but it's cool

Here in Korea the only fresh herb that I m able to consistently find at most grocery stores is mugwort: ( I ve only seen fresh mint on rare occasions. I wish I could try this though cause it looks so good: (

Thank you for this recipe! I always like it when someone has a recipe for something I've never come across before, and this one is like no other potato salad I've ever had. I can't wait to try it!

When I make potato salad, if I am using raw onions I let them hang out in some water spiked with a little salt, vinegar, and sugar for awhile and them drain them. Also a good way to de-fang them.
